Genuine organic all-purpose organic flour milled from organic einkorn, the world’s most primitive wheat. Our Einkorn All-Purpose Flour is comparable to a “white einkorn flour”, only most white flours have additives (such as bleach and other chemicals).  Our flour does not.

And we also don’t call it “White Einkorn Flour” because its not totally white.  It has a characteristically slight yellow tint, which is indicative of einkorn’s high lutein content, a powerful anti-oxidant.

All-purpose flour is not the same as whole grain flour.  Whole flour means nothing has been removed. All-purpose flour means the ash and germ have been removed to give it the white (instead of light brown) appearance.  We now offer Freshly Milled 100% Whole Grain Einkorn Flour, as well.

    I would like to try the all-purpose einkorn flour. I currently have some whole grain einkorn flour and have used it, but whole grain flours taste so sweet to me that I usually end up having to mix them with white flour from modern wheat. Please let me know when your all-purpose flour is back in stock. I have rated it three stars, because your site will not allow me to submit a comment without rating it, but please bear in mind I have not tasted it.

    Are you ever going to get the all-purpose flour back in stock? I’ve been waiting for more than 18 months and it’s never been in stock. Wouldn’t it be ethical to take it off your page since you’re no longer selling it.

      Hello, we are not ceasing to sell it. We have been trying for a long time to move the processing in house, but we’ve had to wait for multiple piecees of a equipment to get here from Europe. That’s a slow process anyway, but COVID has made everything slower. They are estimating it will only be a couple months at this point. Thank you for checking in!

      Hi Valerie, we do no import from Italy. We grow our einkorn on our organic farm, in Idaho. We also contract other organic farmers we trust to grow for us.

    Hi Valerie, I would be happy to help. The whole grain is just the berries ground into flour with nothing removed. The all-purpose flour has had the bran and the germ removed. So it’s a white flour and is much less nutrient dense and flavorful than the whole grain flour.

    I have been looking for flour that was healthy enough to feed my family bread every day. I assumed that an ancient grain would be thick and heavy like a hearty whole wheat…I couldn’t have been more wrong! So far I’ve made pizza dough and a dessert with this flour and both were the best I’ve ever made. The flour is so soft you could use it for any baked item and I have no doubt it will turn out great. I am just shocked by how delicious it is! I’m going to get some of the berries next and mill it myself to see how my family likes he whole grain.

    I purchased this flour just to try it, I hadn’t heard of it before . Baked with it and fell in love , started to look it up online and fell in love all over again when I read the benefits of it.The flour is amazing, the taste,the consistency and flavor. So far I have developed about 10 recipes and still going they all come out amazing and taste spectacular. My only problem is I live in Port St.Lucie and its not available here at any of the retailers.

    Had to try some einkorn, see if I bloated on it, or other signs of gluten intolerance. Made a loaf of English muffin bread and WOW! The flavor is so much better than today’s wheat! The bread was yellow in color, in fact! But, the best part is, NOT BLOATING or other intolerance symptoms! Guess I now need a larger bag!
